Chicken Siow
(Chicken in Thick Tamarind Sauce)

Ingredients A:  (Serves 4)
Shallots, finely pounded 200g
Sugar 10 tbsp
Coriander powder 3 tbsp
Salt 1 tbsp
Dark soya sauce 3 tbsp
Pepper 1 tbsp
Chicken, cut into large pieces 1kg
Tamarind 250g

Method :
1. Soak the tamarind in 1 1/2 cups water and squeeze through a strainer to obtain juice.
2. Mix the tamarind juice with ingredients A in a bowl and stir well. Add the chicken pieces and marinate overnight.
3. Using a non-stick pan, fry the chicken pieces one at a time in some oil till cooked.
4. Pour the tamarind marinate over the cooked chicken, stir well and bring to boil. Serve with boiled white rice.
