| Shallots, finely pounded | 200g |
| Sugar | 10 tbsp |
| Coriander powder | 3 tbsp |
| Salt | 1 tbsp |
| Dark soya sauce | 3 tbsp |
| Pepper | 1 tbsp |

| Chicken, cut into large pieces | 1kg |
| Tamarind | 250g |
| Method : |
| 1. Soak the tamarind in 1 1/2 cups water and squeeze through a strainer to obtain juice. |
| 2. Mix the tamarind juice with ingredients A in a bowl and stir well. Add the chicken pieces and marinate overnight. |
| 3. Using a non-stick pan, fry the chicken pieces one at a time in some oil till cooked. |
| 4. Pour the tamarind marinate over the cooked chicken, stir well and bring to boil. Serve with boiled white rice. |
